Seriously You’ve Got To Try These!
Not too long ago, one of the healthy snack ideas that we mentioned was Kale Chips. If you’ve had a chance to try them, I hope you loved them! If you haven’t, I encourage you to pick up some kale at the next farmer’s market and give this recipe a taste! Kale is a nutritious powerhouse that is very high in beta carotene, vitamin A, vitamin K, vitamin C, and reasonably rich in calcium. Some have called it the “queen of greens.”
This leafy vegetable is definitely one to work into your diet and now is the perfect time because it’s in season and available locally!
Eating a variety of vegetables will do wonders for your health. So if you are stuck in a veggie rut and keep choosing the same old standbys time and time again, then it’s definitely time to try some kale. If you’ve never had it before, this is a great recipe that appeals to both adults AND kids – true story, just ask one of our clients who served it to her 6 year old and when it was all gone he asked, “When can we have this again?” It’s been on their dinner table one night a week ever since. Kale Chips
- 1 large bunch kale, leaves separated, rinsed and dried
- Olive oil spray
- 1/3 cup grated Parmesan or Asiago cheese
1. Preheat oven to 275 degrees
2. Using a knife, remove the thick inner stems from the leaves, leaving long strips; cut the strips in half. Arrange the leaves dark side up in a single layer on two baking sheets.
3. Lightly mist each piece with olive oil spray. Sprinkle generously and evenly with Parmesan cheese.
4. Bake about 14-16 minutes, until the leaves are crisp and the cheese is lightly golden. Sometimes the leaves bake unevenly, so watch them carefully, removing the crisp ones as they are done and returning the others to continue baking until done. Serve warm.
