Pizza – Yes You Can!
It IS possible to indulge in delicious pizza without breaking the scale or tipping the delivery person! The key to everything is portion control, but with this recipe you can even enjoy more than 1 slice. And here’s a cooking tip, don’t try to cut the calories even further by using fat-free feta because it won’t melt properly. Enjoy!
Mushroom Pizza
Makes 12 slices; Prep time: 10 min; Total time: 20 min.
Ingredients:
- 3 cups mushrooms, thinly sliced
- 1 tbls chopped fresh parsley
- 1 garlic clove, minced
- Pinch dried red pepper flakes
- 1 tsp chopped fresh rosemary
- 1 whole wheat pizza crust
- 1 cup shredded low fat mozzarella
- 1/2 cup crumbled reduced-fat feta
- 3 cups arugula
- 1 tbls extra-virgin olive oil
- 1 tsp white wine vinegar

Directions:
Preheat oven to 450 degrees. In a medium bowl, combine the mushrooms with parsley, minced garlic, red pepper flakes, rosemary, and season with salt and pepper. Set aside and let sit for 5 minutes.
Sprinkle prepared pizza crust with mozzarella, feta, and mushroom mixture. Bake for 7 to 10 minutes or until edges of crust are golden brown.
Meanwhile, toss arugula with oil and vinegar, and season with salt.
Remove pizza from oven and cut into 12 slices. Top each slice with dressed arugula.
